Kick off your brunch with this tropical French toast recipe featuring a delicious mango sauce made from frozen mangos and plant-based ingredients. Perfect for a sunny vibe, this dish serves 2-3 people.
In a large mixing bowl, add cashew milk, garbanzo flour, cinnamon, nutmeg, black salt, vanilla extract, and coconut sugar, then stir/whisk together until fully mixed. Set aside and let sit for 10-15 minutes.
In a small saucepan, pour in your mango, coconut sugar, orange juice, and water. Cook on medium high heat for 10 minutes, stirring frequently until the mango is soft and fork tender. Remove from heat and set aside.
Heat a cast iron skillet with coconut oil on medium high heat. Quickly whisk the batter again before dunking each slice of bread for 5 seconds on both sides.
Place the dunked bread onto the hot skillet without moving it to avoid batter peeling off. Cook each side for 90 seconds to 2 minutes, or until golden brown. Repeat for each slice.
To serve, place 2 slices of French toast onto a plate. Optionally spread some vegan cheese on top, add a large scoop of mango sauce, and garnish with sliced seasonal fruit and maple syrup. Enjoy immediately.
